Healthy wholemeal scones with orange, honey and currants
- 225g (1½ cups) whole-wheat flour
- 10ml (2 tsp) baking powder
- a pinch of salt
- 40g (¼ cup) butter, cubed
- 125ml (½ cup) currants
- zest of 1 orange
- 30ml (2 tbsp) honey
- 1 large egg
- 190ml (¾ cup) Greek yoghurt + extra for brushing
- preserve and creamed honey, to serve
Preheat the oven to 180°C and grease and line a baking dish.
Place the dry ingredients in a bowl and rub in the butter until the mixture resembles coarse breadcrumbs. Add currants and orange zest.
Whisk the honey, egg and yoghurt together and stir into the dry mixture.
Pat the dough into a round shape the size of a large dinner plate, place it in the baking dish and cut into 8 – 10 wedges. Brush with extra yoghurt.
Bake until golden brown, about 20 – 30 minutes.
Serve warm with your favourite preserve and creamed honey.
