Home-made mustard sauce

Home-made mustard sauce

Serves: 500ml
Cooking Time: 15 mins

Ingredients

  • 500ml (2 cups) milk
  • 1 bay leaf
  • ½ onion
  • 5 black peppercorns
  • 3 sprigs fresh thyme
  • 50g butter
  • 50g cake flour
  • 20ml (4 tsp) hot English mustard powder
  • juice of 1 lemon
  • salt and freshly ground black pepper, to taste

Instructions

Place the milk, bay leaf, onion, peppercorns and thyme in a small pot and scald. Remove from heat and strain.

Melt butter in a pot over low heat and remove from heat. Add flour, return to heat and cook for 1 minute. Slowly add the strained milk, stirring. The mixture must thicken and come to a boil.

Add mustard powder and simmer for a further 2 minutes. Remove from heat, stir in the lemon juice and season.
