Mandazi bread

This warm and spicy bread is delicious with any drink and makes a welcome change from cheese straws.

Mandazi bread

Serves: 30

Ingredients

  • 800g cake flour
  • 10g dry yeast
  • 15ml sugar
  • 25ml cumin seeds, roasted
  • 25ml caraway seeds, roasted
  • 12ml salt
  • 280ml hot (not boiling) water
  • 60ml olive oil
  • 750ml sunflower oil

Instructions

Combine the flour, yeast, sugar, seeds and salt in a bowl.

Add the water and olive oil and mix together to form a sticky dough.

Knead the dough for 10 minutes on a floured surface. Return to the bowl and cover with plastic wrap. Leave in a warm place until the dough has doubled in size.

Roll out a 30cm square (about 1cm thick) of dough onto a floured surface. Cut into long strips. Place in boiling-hot sunflower oil until puffed up and golden, and serve immediately.
