This refreshing glass of zestiness is the perfect antidote to a hot day. Raspberry lemonade cordial is a delightful twist on a classic cool-down. You can substitute the raspberries with blackberries or strawberries.
Raspberry lemonade cordialPrint Recipe
- 250ml (1 cup) water
- 200g (1 cup) sugar
- 250ml (1 cup) lemon juice
- zest of 1 lemon
- 250ml (1 cup) raspberries, puréed
- 125ml (½ cup) whole raspberries
- crushed ice, to serve
- sparkling water, to serve
- fresh mint sprigs, to serve
To make the lemonade, heat the water, sugar and lemon juice until the sugar has dissolved. Turn up the heat and simmer for 15 minutes.
Leave to cool completely before stirring in the lemon zest, raspberry purée and raspberries.
Serve with crushed ice, sparkling water and mint.
