Straw potato chips

Serves: 4
Cooking Time: 20 mins


  • 500g potatoes, peeled
  • 2 garlic cloves, crushed, skin on
  • zest of 1 lime
  • Maldon salt, to serve



With a potato peeler, shred the potatoes into thin strips. Place in a mixing bowl with water and leave to rest until ready to cook. Once ready to cook, pat the potatoes dry with paper towel.


Heat oil in a deep pot and frythe potatoes and garlic in batches until golden and crispy, for about 1 minute. Drain and sprinkle the potatoes with the zest and salt. Serve hot with garlic mayonnaise.
