• The perfect umami topping for everything 

    Transform your mushrooms into crispy, savoury bits that add rich, smoky flavour to any dish. These versatile mushroom “bacon” bits are perfect on pasta, salads, toast, eggs, and more!

    Ingredients

    • HC Mushrooms, diced into small pieces 
    • 2 tbsp soy sauce 
    • 2 tsp honey 
    • Optional seasonings: 
    • Garlic powder, to taste 
    • Smoked paprika, to taste 

    Instructions

    Prep the mushrooms: Dice your HC Mushrooms into small, bite-sized pieces.

    Soak the mushrooms in boiling water for about 20 minutes and then dry them with a paper towel.  Save the mushroom liquid! It's perfect for adding depth to broths, soups, and sauces.

    Mix the marinade: In a bowl, combine the soy sauce and honey. Add garlic powder and smoked paprika if desired for extra flavour.

    Coat the mushrooms: Toss the diced mushrooms in the marinade until evenly coated.

    Roast: Spread the mushrooms in a single layer on a baking sheet. Roast at 190°C for 30-40 minutes, stirring occasionally, until crispy and caramelized.

    Cool and store: Let cool slightly, then use immediately or store in an airtight container in the refrigerator for up to 4 days. 

    Notes

    Don't discard that mushroom liquid! It's liquid gold for cooking. Use it as a base for vegetable broth, add it to soups and stews, or use it to deglaze pans for rich, flavourful sauces.
