Prep the mushrooms: Dice your HC Mushrooms into small, bite-sized pieces. Soak the mushrooms in boiling water for about 20 minutes and then dry them with a paper towel. Save the mushroom liquid! It's perfect for adding depth to broths, soups, and sauces. Mix the marinade: In a bowl, combine the soy sauce and honey. Add garlic powder and smoked paprika if desired for extra flavour. Coat the mushrooms: Toss the diced mushrooms in the marinade until evenly coated. Roast: Spread the mushrooms in a single layer on a baking sheet. Roast at 190°C for 30-40 minutes, stirring occasionally, until crispy and caramelized. Cool and store: Let cool slightly, then use immediately or store in an airtight container in the refrigerator for up to 4 days. Don't discard that mushroom liquid! It's liquid gold for cooking.
