Serves: Makes 1 jar Time: 10 mins

  • 300g (2 cups) unsalted and roasted peanuts
  • 1,25ml (¼ tsp) coarse salt
  • 45ml (3 tbsp) honey
  • 30ml (2 tbsp) vegetable oil
  • 40g (¼ cup) unsalted and roasted peanuts, roughly chopped

Place the 300g peanuts in a food processor and blitz for 1 minute. Scrape the sides of the bowl with a rubber spatula and process for a further 3 minutes until smooth.

Add the salt and honey, and process until well combined.

Add the oil and process for 30 seconds. For a softer consistency, add another 10ml (2 tsp) oil.

Remove the mixture from the processor and add the 40g chopped peanuts, mix well and place in a sterilised glass jar. Store in the fridge for up to 1 month.
