• Creamy, fruity and delicious! Lassi is a yoghurt-based beverage that originates from Punjab and is seasoned with spices and fruit. This litchi and cardamom lassi is great as a dessert or a refreshing drink.

    Litchi and cardamom lassi

    Serves: 2
    Cooking Time: 15 mins

    Ingredients

    • 250ml (1 cup) litchi juice
    • 310ml plain yoghurt
    • 125ml (½ cup) litchis, chopped
    • 4 cardamom pods, seeds only
    • honey, optional
    • crushed ice, to serve
    • extra litchis, to serve
    • Madeira cake, to serve

    Instructions

    For the lassi, blend the ingredients until smooth. Thin it out with more litchi juice and sweeten with the honey.

    Pour the lassi over crushed ice, top with extra litchis and serve with the cake on the side.
