Crispy, golden pap-crusted potatoes paired with creamy garlic mayo – it’s the ultimate side dish or snack!
Pap-crusted potatoes with garlic mayo
Ingredients
- Chilli salt
- Sea salt flakes ( maldon salt)
- 3 tsp chilli flakes
- 1 ½ tsp paprika
- Garlic mayo
- 1 garlic clove, finely chopped
- 1 cup mayonnaise
- Pap-crusted potatoes
- 1.5 kg potatoes, peeled and chopped
- ½ cup maize meal
- ½ cup grated parmesan
- 1 ½ tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- Vegetable oil for frying
Instructions

COMBINE all the ingredients together in a bowl and mix well. Set aside.
Garlic mayo
COMBINE the garlic and mayo together in a bowl and mix well until incorporated. Season to taste.
Pap-crusted potatoes
PLACE the potatoes into a pot of cold water and bring to the boil over a medium heat. Cook for 10 minutes or until just tender. Drain.
COMBINE the remaining ingredients together in a bowl, except for the vegetable oil. Add the potatoes and gently mix to coat.
HEAT the oil in a pot over high heat . Add the potatoes and fry, turning occasionally, for 7-8 minutes or until golden.
SPRINKLE the potatoes with chilli salt and serve with garlic sauce.
