Sweet chilli chicken strips with peanuts on oriental noodles with fresh pineapple and Indian candy

    Serves: 8
    Cooking Time: 30 mins

    • 6 chicken breasts, thinly sliced
    • 80ml sweet chilli sauce
    • 50ml sesame oil
    • salt and freshly ground black pepper, to taste
    • 4 carrots, julienned
    • 2 red peppers, julienned
    • 500ml mange tout, julienned
    • 50ml brown sugar
    • 80g peanuts, roasted
    • 100ml basil, torn
    • 6 x 85g packets instant noodles, cooked
    • 80ml light soy sauce
    • 2 pineapples, peeled and cut into small cubes
    • 60ml Indian Candy, optional

Combine the chicken with the sweet chilli sauce and mix well.

Heat the sesame oil in a wok or frying pan and add the chicken in two batches. Stir-fry each batch until the chicken is cooked through, about 5 minutes. Season and set aside.

Add the carrot, pepper and mange tout to the wok, toss, cover and simmer for 1 minute. Return the chicken to the wok and add the sugar, peanuts and basil.

Place the noodles in a bowl and pour the soy sauce over. Toss to combine and serve while still hot topped with the chicken, pineapple cubes and Indian Candy.
