Chorizo omelette with chilli beans
Arriba!! Chorizo omelette with chilli beans ,a Mexican inspired spicy brunch or breakfast recipe that will add a kick to your morning…and it only takes 15 minutes!
HANDS ON TIME 15 min / TOTAL TIME 15 min/ SERVES 4
- 1 tin (410 g) baked beans in chilli sauce
- 3 tsp olive oil
- 1 chorizo sausage, sliced thinly
- 125g cherry tomatoes, halved
- 6 eggs
- 2 tbsp milk
- 1/2 cup grated cheddar
- 1 large avocado , coarsely chopped
- 2 tbsp lime juice
- 1/4 cup parsley leaves
- 1 lime, cut into wedges
PREHEAT the oven to grill.
PLACE the baked beans in a microwave-safe bowl and cover. Microwave for 2 minutes, stirring halfway through cooking time. Remove the beans from the microwave and set aside. Cover to keep warm.
HEAT the oil in an ovenproof frying pan over a medium-high heat. Add the chorizo and tomato and cook, stirring, until the chorizo is browned and crisp.
WHISK the eggs, milk and half the cheddar cheese together in a bowl and season well. Pour the egg mixture into the pan, tilting to cover base of pan. Sprinkle with remaining cheddar cheese and cook over a low heat for about 5 minutes. Place the pan under the oven grill for 1 minute or until just set.
MASH the avocado with lime juice in a bowl and season well to taste.
CUT omelette into wedges and top with chilli beans and avocado mash.
SERVE the Chorizo omelette with chilli beans and top with parsley and serve alongside lime wedges.
<Team tip> Stop throwing away the rendered oil from frying your chorizo! You can use it in future dishes as it helps create an intense flavour. Use it in your dressings or when you fry chicken, the flavour possibilities are endless.
