An Italian speciality, gnocchi are small dumplings made from potatoes, flour and eggs. We’ve lightly pan-fried them here to serve as a drinks snack.
TO DRINK: Rich, peaty Lagavulin 16-year-old single malt whisky from the island of Islay
- 50ml butter
- 30ml olive oil
- 2 garlic cloves, crushed
- 200g ready-made gnocchi
- salt and freshly ground black pepper, to taste
- 100g Parmesan, freshly grated
Melt the butter and olive oil in a frying pan and add the garlic and gnocchi. Lightly fry until golden, tossing regularly. The texture will become crunchy on the outside and remain soft on the inside.
Remove and drain on paper towel. Season well.
Sprinkle with Parmesan and serve while still hot.
Pan-fried gnocchi can be served as a savoury snack with a tomato dipping sauce or as a sweet treat sprinkled with sugar and a dollop of honey.
