• Summer is here, so why not indulge in this thirst quenching watermelon drink?

    Light, crisp and incredibly refreshing, this watermelon and lime quencher is the kind of drink you’ll want on repeat all summer long. Sweet, juicy watermelon does most of the work, while fresh lime adds a zesty lift that keeps it from being cloying. Served ice-cold, it’s the perfect thirst-quencher for hot afternoons, braais or lazy lunches on the patio. Plus…you get to eat the watermelon when it’s finished!

    FOOD TEAM TIP: Use your favourite flavoured sparkling water for extra flavour. For a sweeter drink, use lime cordial instead of lime juice following the dilution guidelines on the packaging.

    Watermelon & lime quencher

    Serves: Makes 1 ¾ litres
    Prep Time: 10 minutes

    Ingredients

    • 1 ¼ litres sparkling mineral water
    • 300 g seedless watermelon, cut into thin wedges
    • 1 cup lime juice
    • 1 lime, quartered
    • 1 cup ice cubes

    Instructions

    Place the lime juice and half the watermelon in a large jug and muddle with a wooden spoon.

    Add sparkling water, remaining watermelon, lime and ice and stir to combine.
