This rustic sweet potato soup is winter comfort in a bowl, with tender chunks of sweet potato and plenty of texture in every spoonful. It’s hearty, warming and wonderfully easy to make, making it an ideal choice for a cosy lunch or fuss-free weeknight dinner.
Rustic and chunky sweet potato soup
Ingredients
- 500g sweet potatoes, cut into rough chunks, skin on
- 10 garlic cloves
- 20ml olive oil
- 100ml honey
- 50g butter
- 100g onions, cubed
- 100g carrots, cubed
- 100g celery, finely chopped
- 500ml dry white wine
- 500ml good-quality vegetable stock
- 250g Gorgonzola, crumbled
Instructions
Preheat the oven to 180°C.
Place the sweet potato and garlic in a roasting pan. Drizzle with the olive oil and honey, and dot with the butter.
Roast until tender, brown and caramelised, about 15 minutes.
Fry the onion, carrot and celery until shrivelled in appearance, about 10 minutes. Add the wine and stock, and bring to a gentle simmer.
Add the potato and garlic then reduce the liquid by half, about 20 minutes.
Sprinkle with Gorgonzola and serve with focaccia while still hot.
