• If you’re looking to upgrade your breakfast routine without adding any extra effort (a rare and beautiful concept), these baked oats are the answer. Blended with banana, honey and eggs, then baked until soft and fluffy, they strike that perfect balance between nourishing and indulgent. Finished with chocolate chips, crunchy almonds and a dollop of yoghurt, it’s the kind of morning moment that feels a little more special — even on a weekday.

    Baked oats

    Serves: 4
    Total Time: 35 minutes

    Ingredients

    • 2 cups oats
    • 3 tbsp honey + extra for drizzling
    • 4 eggs
    • 2 tsp baking powder
    • ½ cup milk
    • 1½ bananas, peeled and mashed
    • ⅓ cup chocolate chips
    • ½ cup chopped roasted almonds
    • ⅓ cup double cream yoghurt
    • 2 tbsp pomegranate rubies

    Instructions

    PREHEAT oven to 180ºC. Grease 4 ramekins with non-stick cooking spray.

    PLACE the oats, 3 Tbsp. honey, eggs, baking powder, milk, and bananas in a blender and pulse 3-4 times until well combined. Transfer to a bowl and fold in the chocolate chips.

    DIVIDE mixture into ramekins and bake for 20 minutes.

    DRIZZLE over some extra honey and top with chopped nuts, yoghurt, and pomegranate rubies.

    Notes

    TIP:  If you don’t have ramekins at home, a muffin tin will work just as well. This is also a great way to make the perfect snack-sized on-the-go breakfast.
