Soft-set yoghurt panna cottas

Panna cottas are fuss-free yet elegant puddings ideal for rounding off a rich or heavy dinner.  With a super silky texture, these dreamy desserts have a refreshing tang from yoghurt and fresh strawberries.

Soft-set yoghurt panna cottas

HANDS-ON TIME 20 min | TOTAL TIME 40 min plus overnight refrigeration | SERVES 4

INGREDIENTS

  • 300 ml cream
  • 1/4 cup maple syrup
  • 2 tsp vanilla essence
  • 1 tsp powdered gelatine
  • 1 cup plain yoghurt
  • 200 grams strawberries, sliced

METHOD

COMBINE the cream, maple syrup and vanilla essence in a pot over low heat.

SPRINKLE the gelatine over the cream mixture. Stir until the mixture is hot and the gelatine has completely dissolved. make sure not to boil as this will cause the mixture to split and become grainy!

TRANSFER the cream mixture into a medium heat-proof bowl and allow to cool to room temperature. Once cool, whisk in the yoghurt until combined.

POUR the panna cotta mixture into four 3/4-cup glass serving glasses. Refrigerate for at least 4 hours or overnight until set.

GARNISH panna cottas with sliced strawberries and enjoy!

 

Tip from the team: Level up your panna cottas by using strawberry yoghurt instead of plain. Crumble over some crushed cookies or finely chopped pistachios to serve for added crunch.
